At the time the market for Port was undergoing a profound change. Consumers were becoming more knowledgeable and demanding in their choice of wine. Fonseca Bin No. 27 was created over a century ago for family consumption, and only released commercially in 1972. It is produced primarily from wines from Fonseca's own quintas in the Cima Corgo and thus shows an exceptional quality and consistency from year to year. Following the custom of naming Fonseca’s Crusted Ports using bin numbers such as Bin 740 or Bin 82 VG, Alistair Robertson (Fonseca’s Chairman) decided to call the new blend Bin 27, in a revival of this tradition, in 1972 when the project came to fruition.

Bin 27 is a reserve Port, made using the same approach to making a late-bottled vintage, with extended wood ageing making the wine ready to drink upon its release. This wine, however, is blended from several vintages to achieve a consistent house style.
